Glazed Salmon with Couscous

A flavoursome recipe of salmon with couscous that is simply irresistible



Methods

Preheat oven to 400F. Coat a baking pan or broiler pan with nonstick cooking spray. Place fillets, skin side down, on pan. Rub with brown sugar and 1 teaspoon of the curry powder. Bake 10 to 15 minutes or until salmon flakes easily with a fork.

Meanwhile, cook couscous according to package direction, adding remaining 1/2 teaspoon curry powder to water.

Fluff couscous with a fork; stir in apricots, almonds and green onion. Spoon couscous into the centre of a plate, top it with a fillet and serve.

  • 4 (5 to 6-oz) salmon fillets
  • 1 tablespoon packed brown sugar
  • 1 1/2 teaspoons curry powder, divided
  • 1 cup couscous, uncooked
  • 1/3 cup chopped drained apricots or raisins
  • 1/2 cup slivered almonds or pine nuts, toasted
  • 1 green onion, sliced
